My favorite thing to teach is the carving of faces. Not simply because I enjoy the endless character and expressions one can achieve, but because students are fascinated by the relative ease of my step by step process.
I first introduce the basic safety and use of wood carving tools. Then I point out the importance of the wood grain, assist them in general pattern making and feature placement. Next comes the step-by-step process for carving each feature. In a three hour class students have accomplished a fully realized face unique to each carver.
Intermediate to Advanced class:
After a student has practiced and feels comfortable with the process taught in the beginners class it is time to move on to teaching the use of a few more tools and how to accomplish an endless variety of expressions and features.
